Curry in a Hurry

Supply List:

  • 1 and 1/4 cup of light coconut cream
  • Pinch of salt
  • 2 tbsp of coconut aminos or soy sauce
  • 2 tbsp olive oil
  • 1 and 1/2 tbsp of minced garlic
  • Grated zest of 1 lemon
  • 1 tsp crushed red pepper flakes
  • 1 tbsp curry powder
  • Rice

Method:

Put the coconut cream, salt, and coconut aminos or soy sauce into a jar.

Into a skillet, add the olive oil, minced garlic, lemon zest, red pepper flakes, and curry powder. Blend over medium heat. Turn the heat up, add the liquid ingredients from the jar and stir continuously. The curry will thicken as it comes to the boil. Cook for another couple of minutes, stir to prevent it from sticking to the bottom of the skillet.

This curry sauce is delicious over rice or as a dressing for salad leaves.
